Blueberry Banana Bread Muffins

So I’ve had a number of requests for the blueberry banana bread muffins. the recipe is already on here but I will post it again. The first recipe had some problems with it because I forgot to put some of the information. My bad. Keep in mind that I approximate most measurements. Especially with little things like cinnamon and vanilla. Do what feels right.

BANANA BREAD MUFFINS
(these can be made as muffins or a loaf of bread. I usually make muffins so the baking time will differ slightly.)

In a blender (Or if you are a normal person, a food processor. If you don’t have a food processor and use a blender, mix the bananas first. This will be a fairly thick ‘batter’)
1 cup raw cashews
1 cup roasted/salted cashews
4 ripe bananas
2 tbs olive oil (I use ‘light’ vanilla infused olive oil. The light just means it’s light flavored and throw two vanilla beans in a jar and let it sit for a while.)
1 tbs melted coconut oil
1 cup raw unsweetened coconut flakes (optional)
If it’s too thick you can add a 1/4 cup of water.

In a bowl:
2 eggs, whisked
1 cup almond meal (there are a few different kinds of almond meal. My favorite is the raw kind and it’s available at a natural grocers. It is also the cheapest.)
1 tsp baking soda
1 tsp baking powder
1/4 honey (depending on how sweet you want it)
3 tsp vanilla
cinnamon (not sure how much I used…whatever seems right)

Mix the two together and then add a container of blueberries (or two.) I also sometimes add chopped bananas. The more blueberries, the more moist the bread will be…which can be good or bad depending on what you like.

I also add vanilla protein powder sometimes which I thoroughly enjoy.

Bake at 375 for around 25 minutes. Test with a toothpick or knife.

Gluteal Augmentations and Bacon Pizza

As many of you know I’ve spent the last 5 or so days in Miami having knee surgery and recovering. Well, boy am I happy to be back in Colorado…It could be the heat and humidity that sucks the life out of me or it could be the ridiculous amount of plastic surgery around me and skinny fat women who drive me off the wall. Generally, I’m all for people having their own opinions…I have my own, you have your own, awesome. But if you think you are ‘fit’ and you weight 100 lbs and you have had liposuction 500 times so that you’re belly remains flat, I am sorry, you are not fit. You are fat. You just hide it well. I understand that not all women want to look like me…totally fine…I have more muscle on my body than most women weigh. However, do not argue with me when I say that these women are not fit or ‘in shape’ because that’s total crap. Being small does not equate to being fit. When you have no muscle you are out of shape and unhealthy. I don’t care who you are. You will also be incapable of taking care of yourself when you get older and your life will suck. End of story.
I’m sick of seeing arms with no muscle and chicken legs. Its gross.

OH. I guess the new ‘in’ thing in Miami is getting butt implants. Evidently women are having plastic surgery so that they’re asses are massive and their legs are tiny. I’m all for large glutes as I’m sure many of you but I didn’t really believe that this was actually happening. And then I saw it. In the airport. A tiny little woman with a massive a**. I’ve never seen anything like it and I never want to see it every again. She literally looked like an alien. I guess the proper term for this new trend is called a gluteal augmentation. REALLY!?!??!?!?
Anyways, it’s wonderful to be back. Sidenote, I had to do some leg presses and hamstring curls at globo gym today (Doctor’s orders). Which was awkward to say the least and a little uncomfortable. Working out in a globo gym is not fun- not at all. I don’t understand why people try to talk to you while you are working out. Oh well. At least I was able to move for the first time in almost a week.

Enough of that…We’ve also been doing a bit of cooking…banana bread

and bacon pizza. If you like pizza, and you eat paleo- this is for you. Even if you don’t like pizza (which I don’t) you will devour this s**t. It is by far one of the most amazing things I have ever had. It rivals the chocolate covered bacon for sure.

BACON PIZZA. recipe taken from here.
What you need:
-package of bacon (nitrate free low sodium blah blah blah. I like the taste better but choose whatever kind you like the best)
-shredded cheese. (We discovered some lactose free cheese which I was skeptical about but it is delicious. I’m not saying the ingredients are awesome but whatever. It is delicious.)
-some sort of marinara tomato sauce.
-Peperoni or salami or whatever toppings you would like.

Weave the bacon in and out of itself on a pan and cook in the oven at 425 for around 20 minutes until it’s almost done.
Add sauce, cheese, and toppings and cook for another 5 minutes or until the cheese is melted.
eat.

Banana Bread….

So its official, I have a torn meniscus and I am having surgery. On Monday to be exact. So I’m flying to Miami on Saturday and then having surgery Monday and flying back to CO on Friday. It should be super exciting.

Instead of talking about my knee I am going to tell you guys about the banana bread I made today. It was, and is by far one of the most amazing things I’ve eaten recently.
I started with Juli Bauer’s PaleOMG recipe for banana bread which you can find HERE.
But I changed it a bit. Here’s what I used:

BANANA BREAD
In a blender (Or if you are a normal person, a food processor)
1 cup raw cashews
1 cup salted roasted cashews
4 bananas
2 tbs vanilla infused olive oil. Ma brought this stuff back from Hawaii for me and this is the perfect use for it.
1 tbs melted coconut oil
1 cup raw unsweetened coconut flakes

In a bowl:
2 eggs, whisked
1 cup almond meal
1 tsp baking soda
1 tsp baking powder
cinnamon- I don’t know how much I used. 1 tsp probably
honey- 3 tbs maybe, but I’m not sure

Mix the two together and then add a container of blueberries.
Bake at 375.
I also added Progenex vanilla protein powder and a packet of almond butter to part of the batter. I wanted to see if it tasted good with protein powder and it DID. It was damn delicious.
